The evidence in both the Apocrypha and the Holy Bible. It was also documented in several of the earliest Gnostic Gospels, which were later expelled by the early Church.
Documentation of his rule was also accounted for in the Josephus accounts. The first physical evidence of Pilate's reign over Judea and Israel was found in 1961. It is called the Pilate Stone.
"This inscription was discovered in Caesarea (Israel) by a group led by Antonio Frova and has been dated to 26-37 AD. Currently the inscription is housed in the Israel Museum, Jerusalem."
Prefects (Governor's) were mostly autonomous in their rule and did not really hold what we would consider "trials" by today's standard and in fact, documented very little. There were no stenographers if you will.
Rome required that the taxes be collected and that occupied lands were firmly oppressed and submissive to Roman Authority. Outside of that, the Prefects had little else to concern themselves with. They were "mini-emperors" if you will.
They would not have notified or recorded a crucifixion, trial or death sentence, unless it was someone who was deemed important politically to Rome and Jesus was not at that time.
Therefore, one would not expect that Pilate or any historian in his courts, would have documented the event.
